My signature bake is the Kouign Amann, a rich Breton pastry. I personally manage the lamination of the dough, butter, and sugar, coating the molds to ensure that signature caramelized, crisp bottom. The inside is always moist, sweet, and flavorful. Our most popular treats are the filled versions: the Raspberry Cream Cheese and the rich Creamy Caramel. People love the way these fillings balance the intense buttery base. It’s the perfect blend of classic technique and irresistible flavor.
Who is your favorite person to bake for and what do you make most for them?
My family and our loyal customers. They always express how much they love our baking, and that truly motivates me to keep doing this. I mostly make pastries using laminated dough. It’s challenging work, but that difficulty is what makes the treats so special. I offer a range of Croissant and Kouign Amann flavors: plain, caramel, pistachio and raspberry, chocolate, and almond, and more, to guarantee everyone finds a treat they genuinely love.
How would you use the $10,000?
I'd use the prize to ensure Albright's Delights stays strong and drives growth. Since cold weather closes our regular farmers' markets, this prize is essential for covering winter running costs, keeping us stable until spring. The funding allows me to dedicate time to adapt to changes, generate ideas to grow our business, and find new avenues to reach more people. Finally, I would use a dedicated portion of the prize to have a special bake for local first responders and support a cause/charity.
