I bake seasonally so I am currently baking a lot of apple pies and brown butter pecan pies made with madjool dates Panettone in December.

Right now my signature bake is my deep dish apple pie. I only buy Spy apples from the farmers market. Spys make the best apple pies. I peel,core and use a mandeline 3lbs of apples. I only make a pate brisee(all butter pie crust and I freeze my butter and us a greater to incorporate it into my flour. This way the crust is cold and the crust is flaky as it bakes for almost 2hours at 375. The flavour is enahanced with spices,apple cider and the juices. I brush an egg wash and course sugar outside
Who is your favorite person to bake for and what do you make most for them?
On the first Sunday of every month for over 14 years I host a multifaith prayer devotional. My goal is for people to stick around after the prayers and get to know each other and also have faith based conversations. I have found that surving great food helps me to achieve this goal. So during the winter months I will usually make a large quiche with leeks and pancetta plus a vegan dish. For December I will also make a Panettone, Sufganiot(Donuts) in honour of Chanukah and a Cranberry curd Tart.
How would you use the $10,000?
I would use the $10,000 to travel so I can explore new cuisines and evntually learn how to make them.
