I first got this carrot cake recipe many years ago from a friend in my neighborhood who had 6 children at the time. We were hosting a party at the time and she baked the most incredible carrot cake from scratch. It was the most delicious cake I had ever had. Fresh carrots, pecans and a cream cheese frosting. This neighbor of mine passed away unexpectedly leaving her eight children and husband. I think of her often, especially when I bake this delicious carrot cake; she was an amazing person.
Who is your favorite person to bake for and what do you make most for them?
I bake this amazing cake for friends and family and coworkers too. I bake it with love every time and I always think of my neighbor and friend, who was a beautiful person.
How would you use the $10,000?
I would like to open up a little coffee shop and would name it Darby’s Bakery after my dear friend Darby. 🎂❤️
