My signature bake is toasted almond and apple potato bread. The potato adds softness and depth to the bread dough, without interfering with its flavour. This particular bread is my favourite because I add our own home-grown apples, straight off our acre of land. Anyone can enjoy their apple a day with this dish using storebought apples too, which makes it so fun to make (and eat)! I’ve also been experimenting with baking spice blends for chai tea, and perfecting my corn syrup-free caramel corn.
Who is your favorite person to bake for and what do you make most for them?
My two-year old girl, Mia, who eats every treat with the same enthusiasm as if she’s trying it again for the first time! I make my chewy date butter cookies most for her. Having Mia completely transformed my baking. I remixed all my traditional treats and developed mirror recipes with unrefined sweeteners and organic flour/dairy. My focus is now on both premium taste, and quality ingredients; and I’m a much better baker for it. Just because it’s a little unrefined, doesn’t mean it can’t be rich!
How would you use the $10,000?
Towards Mia’s education fund. She’s put a lot of hours into our little test kitchen and deserves her dues! There are few things more important than the health of our kids - this competition’s charitable cause supports that notion. I’m so passionate about creating treats that let people enjoy beautiful food, without consuming harmful chemicals and additives. I’d consider using a portion to get set up to sell at markets. Real estate lawyer by day, going with the grain moonlighting as a baker!
